Of these badboys.
Yum times TWELVE.

Before I started on Extreme Makeoever, I L.O.V.E.D. to bake.  Loved it.
Did it every day.
For someone else.
For my family.
For my kids.
For my friends.

Changing my relationship with food meant, I'd have to love something else.
So cooking became my new addiction.
Healthy cooking.
And exploring new ways to use old ingredients and make them new or fast.

None of my recipes are just mine.  
They're shared.
They're tweeked.
Perfected over time.

Today, let's make some simple mini omlettes:

Easy as pie, or cupcake tins.

Mini Omlettes
  • Spray your muffin tin with Pam.
  • Combine the following in a bowl:
  1. Egg Whites (2 cups)
  2. Diced Tomatoes
  3. Spinach
  4. Diced Red Onion
  5. Pepper
  6. Low-Fat Cheese (I'm lactose intolerant, so I don't add cheese - but I know it's DELICIOUS.)
  • Preheat oven to 300 degrees Fahrenheit
  • Fill each tin with your mixture.
  • Top with shredded low fat cheese if you're not lactose intolerant.
  • Bake until egg is cooked.
  • ENJOY!
One Dozen cups of deliciousness.
Here's the best part: depending on how many calories you've alloted yourself, you can have around 3 per meal.  WHAT?!  Holy yum!
They freeze like a dream. 
Store them in a ziplock bag, label and date them because you have OCD like me and take them out when you're ready to enjoy another meal.

  2. Awesome, I make a lot of cupcake pan entrees. It is great for portion control, especially on cheat days...I made a batch of my famous mac and cheese then froze them....yum. I am still trying to tweak my mac and cheese to make it healthier, but for now it is a once in a while on a cheat day food. I also make healthy meatloaf and mini taco boats like this along with plenty of other yummy things. Thanks for being so awesome Jami!
